VINCENS (MERLOT)
The 2019 Vincens is 100% Merlot from Rock Spur Vineyard in Melba, Idaho. After working a vintage in New Zealand I was inspired to try more whole-cluster and wild fermentations. This Merlot is the first attempt. Whole-cluster, red wine fermentations create a spiciness that comes from the extended contact time with the grape stems. Slow, wild fermentations help lock in delicate fruit flavor and aromas showcasing a complex wine. Aging in neutral barrels allows the vineyard and winemaking techniques to shine.
