2024 MATARO

aka Mourvèdre

Winemaker Note:
The 2024 Mataro was harvested on October 25, 2024, from Block 70 at Sawtooth Vineyard. Two tons were picked, with a small saignée used to help concentrate the fruit. Fermentation took place in open-top fermenters with light punchdowns, followed by three weeks on skins before pressing to barrel.
The final blend includes an 8% splash of Grenache to help lift aromatics and texture. The wine was aged in 40% new American oak.

 

Tasting:

This shows a more lifted, medium-bodied expression of Mataro, leaning into earthy and savory character. Notes of mushroom, dried herbs, and dark fruit are layered with a subtle, enjoyable funk and a hint of salty, umami depth. The tannins are smooth and silty, giving structure without heaviness and making it approachable while still complex.
 

 

Pairing:
This is built for savory, umami-driven dishes—think lamb, braised beef, or anything with mushrooms. It pairs especially well with roasted meats, game, or dishes with herbs like rosemary and thyme. Also a great match for grilled sausages, lentil dishes, or anything with a slightly rustic, earthy profile.
