Winemaker Note:
This was the first pick of the 2025 harvest. With Sauvignon Blanc, the goal is to limit oxygen exposure as much as possible to preserve aromatics. New Zealand–style Sauvignon Blanc is driven by thiols—volatile sulfur compounds responsible for aromas like grapefruit, passionfruit, and guava. These compounds are fragile and easily lost to oxygen and heat.
To maximize thiol expression, fruit was harvested early in the morning, with SOâ‚‚ added immediately at the vineyard and dry ice used in picking bins to create a protective carbon dioxide blanket. At the winery, the fruit was pressed quickly and gently, then the juice was rapidly cooled and settled. After settling, the clean juice was racked and fermented with a yeast strain selected to enhance thiol development.
Tasting:
Driven by grapefruit and bright citrus, this leans slightly more mineral and fresh compared to classic New Zealand expressions. The tropical notes are more restrained up front, but open into riper fruit with a little air. Crisp, lifted, and focused—this is a clean, enjoyable take on the style.
Pairing:
Perfect with anything fresh and vibrant—oysters, ceviche, or shrimp with lime. It shines alongside goat cheese, salads with herbs or citrus vinaigrettes, and lighter seafood like grilled halibut or scallops.
