Harvest and Production

Project: R. Mountain is our debut release from Ciel du Cheval Vineyard in Washington’s Red Mountain AVA—made from 100% Arneis, a rare and expressive white grape. It’s our first time working with both the vineyard and the variety, and we let curiosity and restraint lead the way.

The grapes were whole cluster pressed, and the juice was allowed to settle naturally before fermentation. We kept the ferment slow and cold to preserve delicate aromatics and build tension—but it ran so slow we had to re-add yeast at one point, worried it might stall out completely. The wine finished with 0.6% residual sugar, not to sweeten, but to soften the edges and balance the structure. Aged in stainless steel, then fined and filtered prior to bottling.

Tasting  Notes

This wine leads with aromas of honeycomb, raw almond, and subtle citrus oils. The palate is textural and weighted, offering a surprising richness for a wine with such lift. Bitter almond and white florals mingle with a light touch of RS to create a wine that is both crisp and layered, finishing long with a gentle, almost waxy grip.

Food Pairing Suggestion

  • Roast chicken with lemon and rosemary

  • Poached halibut with almond brown butter

  • Soft cheeses like brie or robiola

  • Herbed couscous with dried fruit and nuts

  • Grilled peaches with honey and sea salt

Awards and Notes

We were inspired to try our hand at Arneis after tasting a beautiful version made by Par Terre Winery—who once made wine in the very same building we now call home. Their Arneis left a mark, and we wanted to carry that spirit forward in our own way. Cheers to Travis and Mallory Walker for making something memorable!
