Harvest and Production

The 2024 Chenin Blanc is another first for us. Sourced from Skyline Vineyard, it was the last white grape we picked in the vintage—machine harvested, then pressed directly into a stainless steel tank and two new French oak barrels.

Fermentation was slow and clean in both tank and barrel, with the barrel portions also undergoing occasional lees stirring to build texture and depth. In the end, just one barrel—about one-sixth of the total volume—was blended into the final wine, adding a subtle layer of richness to an otherwise crisp, high-acid profile.

145 cases produced.

Tasting  Notes

Bright and sharp, with notes of tart pear, lemon, and green apple.  Super refreshing and drinkable with low alcohol and no residual sugar. Mineral-driven, high acid, and lightly textured from the barrel portion. 

Food Pairing Suggestion

  • Salty cheeses like Manchego or goat

  • White fish with lemon and herbs

  • Spring greens with citrus vinaigrette

  • Crispy fried chicken or tempura vegetables

  • Raw oysters with mignonette

Awards and Notes

The name Unstable was originally used for our 2023 unoaked Chardonnay—but after working with Chenin, it became clear this wine deserved the title.
In hopes of not stripping away flavor with too much bentonite, we chose to let this wine remain a little unpredictable. That means it may throw a protein haze or form tartrate crystals in bottle—harmless, but interesting.
